Bright juicy raspberry and plum aromatics hit first. Followed by some exotic darker fruit and spicy aromas. The flavors mirror the raspberry aromas and add some provencal herb-styled characters. The mouthfeel is medium-bodied with just enough tannin to flesh out the dark fruit finish.

Varietal- 92% Carignane, 8% Syrah

Vineyards- The Dalton Ranch & Roland Rosario Vineyard

Aging/Cooperage- 19 months in neutral oak

Production- The Carignane grapes were picked very early in the morning, destemmed and most of the berries were left uncrushed in bins to 'cold-soak' for 3 days before fermentation. They fermented in small bins for 8 days. We generally press these types of fuit-forward lots just before completion of primary fermentation. The fresh wine was then racked via gravity into small oak casks for completion of fermentation and the duration of a secondary fermentation. After about a month, the wine was racked out of barrels off of the lees and then put back into barrel for an extended aging period. After 19 months, the wine was removed from barrel and bottled with minimal filtration and no fining.
