Aging/Cooperage- 19 months in neutral oak
Production- These Mourvedre grapes from The Tanner Vineyard and The Dalton Ranch were picked very early in the morning, destemmed and crushed into bins to 'cold-soak' for three days before fermentation. They fermented in small bins for another 8 days. We generally press these types of fruit-forward lots just before completion of primary fermentation. The fresh wine was then racked via gravity into small oak casks for completion of fementation and the duration of a secondary fermentation. After about a month, the wine was racked out of barrels off of the lees and then put back into barrel for an extended aging period. After 19 months, the wine was removed from barrel and bottled with minimal filtration and no fining.
