Varietals- 90% Zinfandel, 10% Petite Sirah
Vineyards- 100% The Dalton Ranch
Production- Grapes were hand-picked and gently crushed into small bins for fermentation. Approximately 10% of the grapes were left uncrushed and on-the-stems to add complexity. No yeast was added to this lot and the grapes fermented naturally with only a smnall amount of nutrients added to assist the "native" fermentation. After 9 days on skins and nearing the end of fermentation, this lot was pressed off of the skins and into small new French oak barrels for secondary (or malo-lactic) fermentation. After the secondary ferment, the wine was gently racked off od the primary lees. Minimal amounts of sulfur dioxide were added and the wine was then placed in 20% new French oack barrels for 16 months of aging. Prior to bottling, we blended in 10% Petite Sirah from the same vineyard. The wine was then bottled without fining.
Scott's Notes- In addition to this ZInfandel, we also source Syrah, Sauvignon Blanc, Petite Sirah and Carignane from this vineayrd, making it one of our most important partners. Vineyard Manager Steve Collum farms this vineyard now for the Dalton Family after Jim passed away in late 2010. Steve used only sustainable agricultural practices at The Dalton Ranch.
