Varietals- 90% Zinfandel, 10% Petite Sirah

Aging & Cooperage- 16 months in 2-year-old French oak
Production- Grapes were hand-picked and gently crushed into small bins for fermentation. All of the grapes were crushed and no yeast was added to this lot as the grapes fermented naturally with only a small amount of nutrients added to assist the “native” fermentation. After 10 days and nearing the end of fermentation, this lot was pressed off of the skins and into small new French oak barrels for secondary (or malo-lactic) fermentation. After the secondary ferment, the wine was gently racked off of the primary lees. The wine was then placed in small French oak barrels for 16 months of aging. The wine was then bottled without fining and with minimal filtration. 192 cases were made.
