Aging/Cooperage- 24 months in 25% new French oak, 75% neutral oak
Production- The 2015 Syrah was gently crushed with approximately 25% whole berries left intact. The grapes were fermented in small bins for a period of 11 days. The fresh young wine was then racked via gravity into small French oak casks for completion of fermentation and the duration of a secondary bacterial fermentation. After about three months, the wines were racked and then put back into barrel for an extended aging period. After 24 months the wine was removed from barrel and bottled with minimal filtration and no fining.
Scott's Notes- The Dalton Ranch holds a dear place in our hearts as one of our most important vineyards. Aside from the breathtaking setting of the vineyard and the wonderful fruit that we get from it, Its founder, the late James Declan Dalton was a friend, partner and mentor as we struggled through building this company. His guidance and friendship is missed. However Jim’s daughter Deirdre Dalton now runs the vineyard with the help of longtime vineyard manager Steve Collum and longtime business assistant Susie Miller, both also friends of the winery.
