The PS is deep deep purple in color. Deep and dark plum and blueberry Petite Sirah aromas are followed up with spicy characters and just a touch of oak. The flavor profile mirrors the aromatics, especially with the dark plum flavors. An earthy flavor subtly creeps in about midway through the palate. The mouthfeel is full yet tannins are just now beginning soften and round out the long plummy finish.
Varietals- 100% Petite Sirah
Vineyards- 40% The Dalton Ranch, 30% Aix Sponsa Vineyard, 30% Mayben Vineyard
Aging/Cooperage- 20 months in 3 yr old French and American Oak casks
Production- The 2016 Petite Sirah comes from the three different outstanding vineyards here in Calaveras County. As is typical for us with PS, the fruit was crushed leaving approximately 25% whole berries intact. The grapes were fermented in small bins for roughly 12 days. We press the Petite Sirah just before completion of primary fermentation. The fresh wine was then racked via gravity into small oak casks for completion of fermentation and the duration of a secondary microbacterial fermentation. After about four months, the wine was racked out of barrels, blended and then put back down. After an additional 15 months the wine was removed from barrel and bottled with minimal filtration and no fining.
