Varietals- 90% Cinsault, 10% Muscat Blanc
Vineyards- Rolleri Ranch and Rorick Heritage Vineyard
Aging/Cooperage- 5 months in stainless steel
Production- The Cinsault was crushed into bins where it sat on the skins for about 12 hours. When it picked up just a bit of the pink coloring, it was pressed and then fermented cold in a stainless steel fermenter for a period of about 21 days. We blended in the Muscat Blanc just before bottling in February.
