Crisp, clean and balanced! Pale straw in color, the first aromas in this new vintage are melon and grapefruit. Secondary aromas are lemon and fresh cut hay. At first taste, the wine hits you with high acidity and flavors of lemon and a touch of grassiness. The acidity stays with you all the way through and the wine finishes with melon and grapefruit.
Varietals- 100% Sauvignon Blanc
Vineyards- Jordan Oaks, Dalton, Chatom, Renner and Houston Vineyards
Aging/Cooperage- 4 months in stainless steel
Production- Harvested on separate days, the grapes from these four vineyards were whole-cluster pressed (no crusher) and the juice blended. They then fermented cool and slow in stainless stell fermenters. After a short aging period on the lees, it was racked and chilled down low for 6 weeks to keep fresh and prepare for bottling.
