Varietals - 92% Zinfandel, 8% Petitie Sirah
Vineyard - The Dalton Ranch
Aging/Cooperage - 16 months in one year old French Oak
Production - Grapes were hand-picked and gently crushed into small bins for fermentation. Approximately 40% of the grapes were left uncrushed and on-the-stems to add complexity. No yeast was added to this lot and the grapes fermented naturally with only a small amount of nutrients added to assist the "native" fermentation. After 10 days and nearing the end of fermentation, this lot was pressed off of the skins and into small French Oak barrels for secondary (or malo-lactic) fermentation. After the secondary ferment, the wine was gently racked off of the primary lees. Minimal amounts of sulfur dioxide were added and the wine was then placed in barrels for 16 months of aging. Prior to bottling, we blended in 8% Petite Sirah from the same vineyard. The wine was then bottled without fining and minimal filtration.
Scott's Notes - In addition to this Zinfandel, we also source Syrah, Sauvignon Blanc and Petite Sirah from this vineyard, making it one of our most important partners. Vineyard Manager Steve Collum farms this vineyard now for the Dalton family after Jim passed away late 2010. Steve uses only sustainable agricultural practices.
