Wash and cut root veggies into long "french fry" style pieces. Toss cut veggies with olive oil and bake on a cookie sheet at 350 till al dente. Remove from oven and allow to cool. Heat frying oil to 350 and fry baked fries till golden, about 5-7 minutes. Place in small bowl and toss generously with Cajun Rub. Drizzle Remoulade Sauce on fries.
