Ingredients
  • Fully cooked mini meatballs (your favorite recipe)
  • 1 can (28oz) diced tomatoes, undrained
  • 3 cups beef broth
  • 1 can (16oz) garbanzo beans, rinsed and drained
  • 1 can (16oz) kidney beans, rinsed and drained
  • 1 medium zucchini, sliced
  • 1 cup fresh green beans, cut into 1
  • 1 cup water
  • 2 medium carrots, sliced
  • 2 tsps dried basil
  • 2 tsps fresh garlic, minced
  • 1/4 tsp salt
  • 1 tsp dried oregano
  • 1/8 tsp pepper
  • 1 cup cooked elbow macaroni (optional)
  • 1/4 cup minced fresh parsley
  • parmesan
Directions

In a slow cooker, combine the first 14 ingredients. cover and cook on low 5-6 hours or until vegetables are almost tender. Stir in macaroni and parsley; cook 15 minutes longer or until macaroni is warm. Top with parmesan.
