Steak Tacos with Cilantro-Chipotle Sauce

Ingredients
  • 1 tbsp vegetable oil
  • 1 lb skirt or flank steak
  • kosher salt and freshly ground pepper
  • 4 radishes, trimmed and chopped
  • 2 tbsps fresh lime juice
  • 8 corn or flour tortillas, warmed
  • 2 ozs queso fresco or Cotija cheese, crumbled
  • 1 1/2 cups chopped cilantro
  • 2 tbsps vegetable oil
  • 1 tbsp chopped canned chipotles in adobo
  • 1 tbsp water
  • 1/2 tsp ground cumin
Directions

Tacos:

Heat 1 tablespoon oil in a large skillet over high heat. Season steak with salt and pepper and cook about 5 minutes per side for medium rare. Let steak rest 5 minutes. Meanwhile, chop the radishes and prepare the Cilantro-Chipotle Sauce using the last 5 ingredients listed above (recipe below)

Slice steak and serve on tortillas topped with radishes, Cilantro-Chipotle Sauce, crumbled cheese and lime wedges.

 

Cilantro-Chipotle Sauce:

Add all ingredients into food processor and blend till smooth. Add more water if thinner consistency is desired.
