Preheat oven to 350. Preheat deep fryer to 350.
In a small roasting pan, roast strawberries until soft and liquid has reduced a little bit. Puree warm roasted strawberries in a blender. Transfer to a medium sauce pan. Add sugar to taste, orange zest and cinnamon.
Fry sage leaves until crisp and ravioli until golden.
Serve soup warm and top with ravioli, crème fraiche, fresh thyme and sage leaves
